Coco’s Polka-dot Brownies
Yield: 16 squares

1 cup chocolate chips
1 cup white baking chips (divided use)
1/4 cup butter
3/4 cup sugar
2 large eggs (slightly beaten)
1 cup all-purpose flour
1/8 teaspoon salt

  1. Preheat oven to 350°.
  2. Combine chocolate chips and butter in a heavy-bottomed saucepan. Heat over medium heat until the butter and chocolate are melted and combined.
  3. Let cool slightly and then whisk in sugar and eggs.
  4. Stir in flour and salt until smooth.
  5. Fold in vanilla and ½ cup white baking chips.
  6. Transfer to a greased 8x8 inch baking pan.
  7. Bake for 23 – 25 minutes. Do not over bake. Immediately sprinkle with remaining white chips and bake an additional 2 minutes. Remove from oven and gently spread melted chips until smooth, to form a frosting.
  8. Chill for 20 minutes to allow chocolate to firm. Cut into squares.
