Coco’s Polka-dot Brownies
Yield: 16 squares
1 cup chocolate chips
1 cup white baking chips (divided use)
1/4 cup butter
3/4 cup sugar
2 large eggs (slightly beaten)
1 cup all-purpose flour
1/8 teaspoon salt |

- Preheat oven to 350°.
- Combine chocolate chips and butter in a heavy-bottomed saucepan. Heat over medium heat until the butter and chocolate are melted and combined.
- Let cool slightly and then whisk in sugar and eggs.
- Stir in flour and salt until smooth.
- Fold in vanilla and ½ cup white baking chips.
- Transfer to a greased 8x8 inch baking pan.
- Bake for 23 – 25 minutes. Do not over bake. Immediately sprinkle with remaining white chips and bake an additional 2 minutes. Remove from oven and gently spread melted chips until smooth, to form a frosting.
- Chill for 20 minutes to allow chocolate to firm. Cut into squares.
