Cossette’s Chewy Macaroons
Yield: 16-24 cookies
2 egg whites (room temperature)
1/2 teaspoon vanilla extract
1 pinch salt
6 tablespoons sugar
1 cup flaked coconut |

- Preheat oven to 300°. Grease baking sheet.
- In a small bowl, using an electric mixer, beat egg whites, vanilla, and salt on medium speed until soft peaks form.
- Gradually add sugar, one tablespoon at a time, while beating on high speed, until stiff peaks form. Fold in coconut.
- Drop by tablespoonfuls, 2 inches apart, onto a well greased baking sheet.
- Bake for 25 minutes or until lightly browned.
- Remove to wire racks to cool.
