Natalie’s Praline Cookies
Yield: 36 cookies

1-1/2 packages graham crackers (from a 10 oz box)
1-1/4 cups butter (2-1/2 sticks)
1 cup sugar
2 cups chopped pecans
2 teaspoons vanilla extract
1/2 cup toffee chips

  1. Preheat oven to 350°.
  2. Separate each graham cracker into 4 sections.
  3. Line a 15x10x 2 inch jelly roll pan with aluminum foil, spraying lightly with cooking spray.
  4. Arrange graham crackers in prepared pan with edges touching.
  5. In a small heavy-bottomed saucepan melt butter and stir in sugar and chopped pecans. Bring to a boil and cook for 3 minutes stirring frequently.
  6. Remove from heat and add toffee chips and vanilla.
  7. Spread mixture evenly over graham crackers.
  8. Bake for 12 minutes.
  9. Cool completely, break into individual cookies, and then transfer cookies to an airtight container.
