Natalie’s Praline Cookies
Yield: 36 cookies
1-1/2 packages graham crackers (from a 10 oz box)
1-1/4 cups butter (2-1/2 sticks)
1 cup sugar
2 cups chopped pecans
2 teaspoons vanilla extract
1/2 cup toffee chips |

- Preheat oven to 350°.
- Separate each graham cracker into 4 sections.
- Line a 15x10x 2 inch jelly roll pan with aluminum foil, spraying lightly with cooking spray.
- Arrange graham crackers in prepared pan with edges touching.
- In a small heavy-bottomed saucepan melt butter and stir in sugar and chopped pecans. Bring to a boil and cook for 3 minutes stirring frequently.
- Remove from heat and add toffee chips and vanilla.
- Spread mixture evenly over graham crackers.
- Bake for 12 minutes.
- Cool completely, break into individual cookies, and then transfer cookies to an airtight container.
