Piper’s Fruit Pizza
Yield: 12 slices

Crust:
1 18-oz. package refrigerated sugar cookie dough
1 8 oz. package cream cheese (softened)
1/4 cup sugar
1 egg
1/2 teaspoon vanilla extract

Toppings:
18 fresh strawberries (preferably small), halved and stems removed
1 15 oz can mandarin oranges
1-1/2 cups fresh blueberries
1/3 cup seedless raspberry jam or apple jelly

  1. Heat oven to 375°.
  2. With floured hands, gently press cookie dough onto bottom of pizza pan. You may find it easier to divide the dough into thirds or fourths for patting in pizza pan.
  3. In a medium bowl, use an electric mixer to combine cream cheese, egg and vanilla. Mix until smooth.
  4. Spread cream cheese mixture top of the cookie dough in the pizza pan.
  5. Bake 25 minutes.
  6. Cool completely on wire rack.
  7. Arrange fruit in desired pattern on top of the cooled cookie pizza.
  8. In a microwave safe container, melt jam or jelly. Cook on High power for 20-30 seconds; stir.
  9. Immediately drizzle or brush melted jelly on top of the fruit. Cut into wedges.
  10. Tart can be served immediately or can be made up to four hours ahead; store refrigerated.
