Piper’s Fruit Pizza
Yield: 12 slices
Crust:
1 18-oz. package refrigerated sugar cookie dough
1 8 oz. package cream cheese (softened)
1/4 cup sugar
1 egg
1/2 teaspoon vanilla extract
Toppings:
18 fresh strawberries (preferably small), halved and stems removed
1 15 oz can mandarin oranges
1-1/2 cups fresh blueberries
1/3 cup seedless raspberry jam or apple jelly |

- Heat oven to 375°.
- With floured hands, gently press cookie dough onto bottom of pizza pan. You may find it easier to divide the dough into thirds or fourths for patting in pizza pan.
- In a medium bowl, use an electric mixer to combine cream cheese, egg and vanilla. Mix until smooth.
- Spread cream cheese mixture top of the cookie dough in the pizza pan.
- Bake 25 minutes.
- Cool completely on wire rack.
- Arrange fruit in desired pattern on top of the cooled cookie pizza.
- In a microwave safe container, melt jam or jelly. Cook on High power for 20-30 seconds; stir.
- Immediately drizzle or brush melted jelly on top of the fruit. Cut into wedges.
- Tart can be served immediately or can be made up to four hours ahead; store refrigerated.
